dc.description.abstract Papain is viscous and milky product derived from the latex of the green fruits of papaya fruit (Carica Papaya L.), which has high protein hydrolysing capacity. Papain has a wide variety of applications in different industries, especially in food processing sector. It is being used to tenderise meat and meat products for manufacturing protein hydrolysate, in confectionery industry (to prepare chewing gum), in brewing industry (to remove cloudiness in beer) and in dairy industry (for making cheese). en_US
