Abstract
The practice of drying and grinding root vegetables for preservation and convenience is quite establish. potato flakes are a form of dehydrated potato .potato flakes can be used in place of mashed potato.It is an attractive alternative to mashed potato for producing such popular Indian snacks as "bhujiya "potato powder used as a thickening agent in soups, gravies and curries.
